A couple of weeks I went on my oldest son’s field trip to the zoo. It’s about an hour and a half away and I had to chase four 8 year old boys around the zoo.
It was crazy (and did I mention it was raining too?) and I was starving by the end of it, but with cutting out gluten, dairy and sugar these days since my gallbladder attack in February…you can’t really just eat anywhere.
I found a juice place nearby, amazingly, and they had this thing called and acai bowl (ah-sigh-ee). It looked weird (and purple) and I was afraid to try it honestly. But when I got home I decided that I had to see if I could make one myself…and it was amazing!
There are a million different ways you can change these up, but here’s the basic acai bowl recipe.
Acai Bowl Recipe
Ingredients
- 1 banana
- 1 package acai (with the frozen berries)
- 1 tablespoon cashew butter
- 1/2 cup almond milk
- 1/2 cup frozen berries
- 1 tablespoon cacao powder
- 1 scoop protein power
- various fruits for topping
Instructions
- Throw everything in your Ninja blender and mix for 1 minute.
- Pour into a bowl and top with various fruit.
- Eat within a few minutes because it will melt on you!
Acai is a wild berry found in South America. It has numerous beneficial health properties (check out this article). It is an amazing anti-oxident that is also low in sugar. They are very fragile though and therefore are mostly found frozen outside of the Amazon forest. Check in the frozen berry section of your local store and/or health store (I found them at Randall’s).
If you can’t find the frozen berry pulp, you can order the freeze dried acai powder here and just use that in your acai bowl recipe (this powder is by the same brand that I bought).
