My kids love pancakes. And I love them too because I can hide things in them and sneak some healthy vegetables in on them (check out my sweet potato pancakes).
Pancakes are pretty much a weekly meal (aka brinner) around here. It’s something easy that I know my kids will actually eat without complaining.
They are also an easy meal to make a little healthier with minimal fuss. You can easily use gluten free flour or shred and/or puree vegetables to include in the mix (spinach, zucchini, carrots).
