I really try to eat at least one salad a day….and I would totally be successful too if someone would just make them for me.
But since I have to make them for myself…I try to keep them pretty easy.
This avocado shrimp salad recipe is a good base salad…you can add whatever you have on hand to it and it will only get better.

I honestly think I could eat them for every meal of my life and never get tired of them (which means you’ll probably see a LOT more avocado recipes in the future).
I think it’s weird that my kids don’t like them…but whatever, more for me.
I also love shrimp…so pairing these two together is a no brainer for me. This salad is super easy to make when you need something fast and healthy.

Avocado Shrimp Salad Recipe
Ingredients
- 5 jumbo frozen cooked shrimp
- 2 cups of greens
- 1/2 small avocado, diced
- 1 teaspoon dijon mustard
- 1 teaspoon honey
- 1 teaspoon olive oil
Instructions
- Place the 5 jumbo frozen shrimp into a bowl of cold water to thaw.
- Put your two cups of greens into a salad bowl (I used a pre-washed package for ease.)
- Cut your avocado in half. Put the half with the seed still in it back in the fridge.
- Cut 4 length-wise cuts into the avocado and 4 sideways cuts. Then scoop out with a spoon into your bowl.
- Take the shrimp out of the water (they should be thawed by now) and remove the tails.
- Place them on a paper towel to remove any excess water.
- In a small bowl, mix the dijon mustard, honey and olive oil until completely mixed.
- Drizzle dressing over the salad and enjoy.
