Banana Zucchini Spice Muffins

Banana Zucchini Spice Muffins

My kids LOVE muffins. So I take every opportunity I can to shove things into muffins that they wouldn’t normally eat. But put it in a muffin…and the beg for more!

Evan actually ate 3 and asked for more within the first hour of them coming out of the oven.

Banana Zucchini Spice Muffin

Recipe:

  • 2 small zucchinis – shredded
  • 1 over ripe banana – mashed
  • Spice cake mix ( I used Betty Crocker, but I’m sure it doesn’t matter the brand)
  • 1 cup of water
  • 3 eggs
  • (I omitted the oil because I used banana. I’ve also omitted the banana and oil before and used apple sauce.)

Mash the banana. Shred the zucchini. Mix the cake mix, water and eggs. Then add the banana and zucchini and mix together.

I made muffins using some cupcake liners that I had lying around. I used my secret tip for making perfect sized pancakes to make perfect sized muffins.

Just follow the baking instructions on the box.

This recipe is super simple and a hit with my kids!
