This turned out WAY better than it sounds…although my picky boys, who like their food in separate spots on the plate…refused to eat it, but Maddi LOVED it and actually had 3rds!
- 1 box au gratin potatoes
- 1 1/4 cups boiling water
- 1/4 cup milk
- 1 Tbsp melted butter
- 2 cups shredded chicken
- 1 cup shredded cheese
- 1/4 cup diced onion (optional)
- paprika
- Preheat over to 375.
- Spray casserole dish with cooking oil.
- In a large bowl, mix together au gratin potatoes, boiling water, milk and melted butter.
- Place mixture in casserole dish.
- Sprinkle diced onion and chicken evenly over top of mixture.
- Cover with foil and bake for 20 minutes.
- Uncover, sprinkle with shredded cheese and back for 10 more minutes.
- Remove and let cool for 5 min.
I served this with a side salad and there were hardly any leftovers. If you have a large family, you may want to try doubling the recipe.
