Chocolate Chip Banana Muffins

 

I’m continuing my quest to get my kids to eat a little healthier…by tricking them…I mean…hiding fruits and veggies in their morning muffins! LOL

Here’s a chocolate chip banana muffin recipe that is sure to be tummy pleaser!

Chocolate Chip Banana Muffins

Serves: 12
Ingredients
  • 2 cups of flour
  • 2 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 tsp of salt
  • 2 mashed over ripe bananas
  • 2/3 cup of packed brown sugar
  • 2 lg eggs
  • 1/2 cup of unsweetened applesauce
  • 1 tsp of vanilla
  • 1/2 cup of chocolate chips
Instructions
  1. Preheat oven to 350.
  2. Place 12 muffin tins in muffin pan.
  3. Combine flour, baking powder, baking soda and salt in a small bowl.
  4. In large bowl, mash bananas with a fork.
  5. Then mix in sugar, eggs, applesauce, and vanilla.
  6. Pour dry ingredients into wet and mix.
  7. Stir in chips.
  8. Use ice cream scooper to scoop into muffin tins.
  9. Bake 18-20 minutes or until toothpick comes out clean.

 

These were super yummy and my kids declared them their favorite….even though I called them chocolate chip muffins and left out the banana part.

I HATE bananas and I even liked these!
