I’m continuing my quest to get my kids to eat a little healthier…by tricking them…I mean…hiding fruits and veggies in their morning muffins! LOL
Here’s a chocolate chip banana muffin recipe that is sure to be tummy pleaser!
- 2 cups of flour
- 2 tsp of baking powder
- 1/2 tsp of baking soda
- 1/2 tsp of salt
- 2 mashed over ripe bananas
- 2/3 cup of packed brown sugar
- 2 lg eggs
- 1/2 cup of unsweetened applesauce
- 1 tsp of vanilla
- 1/2 cup of chocolate chips
- Preheat oven to 350.
- Place 12 muffin tins in muffin pan.
- Combine flour, baking powder, baking soda and salt in a small bowl.
- In large bowl, mash bananas with a fork.
- Then mix in sugar, eggs, applesauce, and vanilla.
- Pour dry ingredients into wet and mix.
- Stir in chips.
- Use ice cream scooper to scoop into muffin tins.
- Bake 18-20 minutes or until toothpick comes out clean.
These were super yummy and my kids declared them their favorite….even though I called them chocolate chip muffins and left out the banana part.
I HATE bananas and I even liked these!
