I think I’ve mentioned before that my kids will eat anything as long as it’s in muffin form.

Here’s another attempt to get them to eat something healthy while they think it’s not.

I will warn you…this recipe takes a bit of time to prepare, so don’t think you can do this on a school morning.

But once you’ve got them made, you can store them in the freezer and then just take them out on school mornings and pop them in the microwave for 1.5 minutes…easy, nutritious breakfast they can eat in the car on the way to school!

Cinnamon Apple Bacon Muffins

Gluten Free Cinnamon Apple Bacon Muffins

These yummy treats make a perfect school day breakfast.
Ingredients
  • 2 turkey bacon strips
  • 2 large eggs
  • 2 large egg whites
  • 2 C 1% milk
  • 2 C gluten free all-purpose flour
  • 3/4 tsp. xanthum gum
  • 2 tsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 large sweet apple, coarsely grated or 1/2 C applesauce
  • 1 TBSP butter or margarine, melted
  • (If making with regular flour…omit xanthum gum.)
Instructions
  1. Place the eggs and egg whites in a mixing bowl and beat until mixed well.
  2. Add the milk and beat until thoroughly mixed in.
  3. Place the flour, xanthum gum, sugar, cinnamon and salt in a separate bowl and mix.
  4. Slowly add the flour mixture to the egg mixture stirring constantly as you add until completely mixed.
  5. Allow batter to set 30 minutes.
  6. Preheat oven to 350 degrees.
  7. Cook bacon strips in microwave for 1.5 min.
  8. After the batter has stood for 30 minutes crumble in the bacon.
  9. Add the grated apple (or applesauce) and melted butter and stir.
  10. Spray a muffin pan with a non stick cooking spray.
  11. Fill each cup 2/3 full of the batter.
  12. Bake for 25 -30 minutes or until a golden brown.
  13. Remove and allow to cool before serving or freezing.

 

I’m going to warn you about something else…I’m in an apple mood! So for the next few weeks I’m only going to post recipes that include apples…since it’s that time of year!
