I’m a little behind today on getting my Kids in the Kitchen post up…but it’s still Friday (barely) so I’m calling it a win!
I think I’ve mentioned before that my kids will eat anything in muffin form. That’s not entirely true…they will eat anything in muffin form that also includes chocolate chips!
Since I’m a bit short on time these days, I decided to take a short cut to these muffins…
I used a mix!
But I also changed up some of the ingredients, so it wasn’t 100% by the box.
Cinnamon Chocolate Chip Muffins
1 box Duncan Hines Simple Mornings Cinnamon Streusel Muffin Mix
2 eggs
3/4 cup rice milk ( the box calls for water)
1/3 cup applesauce (the box calls for oil)
1/2 bag of chocolate chips
Then just follow the direction on the box…be sure to use my simple secret for filling the muffin tins easier (and making perfect sized pancakes).
These were really good, but I made one small mistake…I gave one to Maddi…
It wasn’t pretty!
