This week’s Kids in the Kitchen is a special edition! Each of the 4 hosts were sent this “healthy cooking with your kids” cookbook. We each get to choose one recipe and share it with you (so be sure to visit my co-hosts Look What Mom Found, Frosted Fingers and Sensibly Sara to see 3 more recipes from this fun cookbook.

Crostini A Go-Go

I chose to make the Crostini A Go-Go because I thought it would be fun and easy for the kids to do themselves. (This would be a perfect after school snack..quick, easy and fun to let the kids experiment).

The cookbook gives directions for the basic bruschetta and 4 different toppings for it. We made the basic one (at the top), the Tomato-Mozzarella (in the middle) and the Apple Asiago (bottom). I also tried Mozzarella on the apple one and the kids liked that one too. It was fun to experiment!

Here’s the basic bruschetta recipe:

Ingredients:

1 loaf crusty bread, thinly sliced and toasted

2 garlic cloves

1/4 cup extra virgin olive oil

Directions:

Preheat over to 375. Line bread slices on a baking sheet and rub each surface with garlic. Brush a small amount of oil onto each crostini and bake for 15 to 20 minutes or until lightly toasted.

Then just add the various toppings…for the apple one you’ll want to broil it for a couple of minutes to melt the cheese.
