Living in central Texas I have come to love rice and beans and this Easy Mexican Casserole recipe never fails to disappoint.

It has also become my go to meal for when I have to take a meal to a neighbor who has had surgery or a new baby – it’s quick and easy and everyone loves it.

Easy Mexican Casserole

This is the easiest dinner ever. You just dump it all together in one dish, mix and pop in the oven and you’re good to go in 30 minutes.

I wish I could remember where I found this recipe originally and thank them….I make this at least twice a month because I know my kids will not complain.

My kids are fairly picky eaters (this meal is a coup because the different kinds of food are actually all touching…normally they only eat individual foods) so I make mine pretty bland, but you can always add salsa or hot sauce to living it up a bit.

I use this awesome Pyrex rectangular dish with a lid to cook mine in so that I know I can take it with me or just throw the dish in the fridge easily if there happen to be any leftovers.

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 6-8 servings

Easy Mexican Casserole

This is the perfect kid friendly meal. It will quickly become the family favorite for Taco Tuesday.

Ingredients

  • 2 bags of Boil in Bag Instant Rice
  • 1 can of black beans
  • 1 can of corn
  • 1 cup shredded Mexican cheese, divided
  • 1/2 cup sour cream
  • bag of corn chips
  • salsa (optional)

Instructions

  1. Preheat the oven to 350 degrees.
  2. Follow the directions on the box to cook the bags of rice.
  3. Once cooked, drain the water from the bags (I use tongs to squeeze out the water) and dump the rice into a casserole dish.
  4. Open the can of beans, drain the juice in the sink and add to the rice.
  5. Do the same with the can of corn.
  6. Add the sour cream and half of the cheese.
  7. Stir everything together and then make sure that it is evenly spread throughout the dish.
  8. Sprinkle the remainder of the cheese on top.
  9. Place in preheated over for 15 minutes.
  10. Serve warm with chips.
