Ok…before you read any further, I’m going to admit that I cheated a little in this salad. It’s not from scratch, but it is super easy and healthy and that’s why I decided to go ahead and post it….life is busy, I NEED easy and healthy.
I think I mentioned earlier this week in my post about taking cooking classes online that my insulin levels have gone back up even though I’ve lost weight….NOT cool!
So I’m doubling my effort to really make some changes to our diet and how we think about food so that I can get mine under control and the kids don’t ever have to battle it because we will have established good food habits early on with kid friendly recipes.
This was one of those Taylor Farms salad kits (I am not getting paid to tell you this…I just really like their salad kits.) that you can buy at Target. I love how easy it is! Even though I work from home, I squeeze every last minute out of my kid-free time to get everything I need to accomplish done (impossible I know, but I try).
These kits help me stay to my “salad for lunch” pledge without spending 30 minutes cutting and chopping. I typically throw a few chicken breasts in the crockpot at the beginning of the week so that I have some protein to add to my salad.
Southwest Chicken Chopped Salad
Ingredients
- 1 Taylor Farms Southwest Chopped Salad Kit
- 1 cup cooked chicken, shredded
Instructions
- Mix all ingredients together in a large bowl.
- Separate into three servings.
- Put the first serving into your bowl for today.
- Put the next two servings into containers for lunch the next two days.
