Making the adjustment to a whole foods diet can be a little daunting at first. You tend to focus on all the foods that you can no longer have.
It takes a little bit of mindset shift to start focusing on the foods you can now enjoy in their nature state…without all the crap and processing!
This avocado black bean dip is so versatile – it can be made gluten and dairy free too!
Avocado Black Bean Dip
This dip is the perfect side dish to take along to a party – so you KNOW you’ll have something you can eat – or can even be just your main meal on nights when you need something fast.
I chose to make mine both gluten and dairy free (using Daiya Cheddar Style Vegan Cheese) and made sure to buy black beans not in can but in a cardboard container. Try to find organic corn tortilla chips too if you can to reduce your GMO and herbacide exposure.
Also…make sure you rinse the beans first. Just dump them in a strainer and wash off the juice…I’ve never liked my black beans soggy!
Ingredients
- 1 container black beans
- 1 avocado
- dash of garlic powder
- dash of onion powder
- handful of shredded cheese
Instructions
- Rinse the black beans and place them on the bottom of whatever plate/container you'll be making the dip in.
- In a separate bowl, scoop out the inside of the avocado and mash it with a fork.
- Sprinkle the garlic powder and onion powder to taste and mix.
- Place the avocado mixture on top of the beans and spread lightly.
- Sprinkle cheese on top.
- You can eat it like this or heat it until the cheese melts.
- Serve with your favorite chip.
Homemade Tortilla Chips
If you’re really feeling adventurous, try making your own homemade tortilla chips. They are REALLY easy to make and cooking them yourself allows you to season them to your specific tastes.
I followed this recipe for homemade baked corn chip recipe from Glutenista.
I made two batches. The first batch I seasoned with Lowry’s Season Salt and the boys ate all those. They seemed a bit chewy though, so the next batch I made with sea salt and spread the chips out a bit more on the pan while cooking. And those turned out crispier.
These chips with the avocado black bean dip was an amazing combo! Everyone loved it and it didn’t hurt my stomach or my wallet!
