More fun tests this past week…and more results that (while thankfully show no malignancy) all point to a pretty strict diet from here on out for me. But instead of looking at it as what I can’t eat…I’m choosing to look at it as a chance to learn to cook really healthy meals and help not only myself, but you too!

Monday – Chicken Lettuce Wraps
Tuesday – Skillet Tamale Pie
Wednesday – Sweet Potato Black Bean Burgers
Thursday – Spinach Bacon Quiche
Friday – Meatza
Saturday – GF Sweet & Sour Chicken with brown rice
Sunday – Grilled Lamb Chops with Sweet Potato Fries and fresh Green Beans Happy Easter!
