Finding something that the entire family will eat, that is also mildly healthy, is the ultimate chore around here.

Last night the stars aligned and I managed to make something that hardly anyone complained about (the 5 yr old picked out the almonds…even though he likes almonds…I think he just needed something to complain about).

I got one of those pre-cooked chickens at Target (OMG if you haven’t tried it you MUST go now and get one) and I figured I’d make a quick side dish out of green beans and rice, and call it dinner.

This really could have even been a one pot meal if I’d just thrown the chicken in. We have some left over and I think I may throw some shrimp or sausage in it and I bet it’ll be just as awesome tonight!

Gluten Free Recipe: Green Beans and Rice

This green beans and rice recipe is the perfect side dish for any gluten free meal…or throw some shrimp or sausage in and make it a one pot meal done in less than 30 minutes.
Ingredients
  • 1 tbsp butter
  • ½ cup slivered almonds
  • ½ red pepper – diced
  • 3 cups cooked rice
  • 1 package frozen thin green beans (10-12oz)
  • salt and pepper

Instructions
  1. Melt the butter in a large pan on medium heat.
  2. Place the slivered almonds in the pan and cook until they begin to turn golden brown.
  3. Add the peppers into the pan and cook for 2 minutes – stirring often.
  4. Pour in the rice and beans and mix.
  5. Add salt and pepper to taste.
  6. Continue to mix together until all is evenly mixed and cook for 5 minutes.
  7. Serve and eat!

I used my handy dandy rice cooker to cook the rice to prep for this dish (makes life soooo much easier) and this totally would be better with fresh green beans…but I’ll have to wait for summer to try that.
