I LOVE tortillas!
I’ve lived in TX for 18 years (my whole adult life). I eat tortillas every day. I cannot/will not live without them!
Back story: After years of having low blood sugar, about a year ago my blood sugar was actually starting to get high and in the pre-diabetic range. I’d seen a few doctors about the different symptoms and they just blew me off. I wanted to know what was causing the issues and I thought that maybe it was diet related. So last February I went to see a nutritionist. I was willing to make some changes and take the supplements she wanted me to, but I was REALLY not happy when she said she wanted me to go sugar free and gluten-free.
I complained and moaned for the first few weeks, but I started to feel better AND lose some weight. My blood sugar was coming down. My acid reflux was almost completely gone. My stomach issues were much improved.
I became intrigued with this whole gluten-free idea. I started following Dr. William Davis’ Wheat Belly Blog and read his book, also called Wheat Belly. It was VERY eye opening. One of things that most surprised me was when he stated that whole wheat, which is pushed in all diets and good nutrition articles, actually causes your blood sugar to rise more than plain old white bread.
So I stuck to the gluten-free diet for a few months, but then I started traveling quite a bit. It’s REALLY hard to stay gluten-free and travel.
I admit, I fell off the wagon. I didn’t gain any more weight, but I’ve definitely noticed some acid reflux and stomach issues creeping back in lately, so I know I need to get back to it.
BUT I CAN’T GIVE UP TORTILLAS AGAIN!
I eat them every day, really! I tried to make some paleo tortillas this past summer and that didn’t turn out so well, so I continued to put off going completely gluten-free because of the tortillas.
Last week while I was shopping at Sprouts, I found Food for Life’s Brown Rice Tortillas. I thought “Can’t hurt to try.” They are HUGE and actually stay together and don’t fall apart. But best of all, they are GOOD!
I’m hoping that this discovery helps me to stick to my gluten-free diet a little easier.
