In my work as a health coach, I get about 10% of my clients that tell me they are vegetarians. I designed this Vegetarian Taco Soup recipe to be perfect for my vegetarian and vegan clients, but it can easily be made with meat and dairy and work as just a plain Keto soup too.

Keto Vegetarian Taco Soup

This recipe is both vegetarian and vegan (no animal products used), but if you use dairy cream cheese, heavy whipping cream and ground beef it can easily be converted into your standard Keto Taco Soup recipe.

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Keto Vegetarian Taco Soup

Ingredients

  • 1 tbsp coconut oil
  • 2 bags Beyond Meat Beyond Beef Crumbles, Feisty
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cumin
  • 1 carton (32 oz) vegetable broth
  • 16 oz water
  • 1 can diced tomatoes
  • 8 oz cream cheese (can use Kite Hill Almond Milk Cream Cheese)
  • ½ c heavy whipping cream or coconut milk

Instructions

  1. Place soup pot on medium heat and add coconut oil.
  2. Add the 2 bags of Beyond Meat Beef Crumbles and stir until thawed (about 5 min)
  3. Add in garlic powder, onion powder and cumin and stir (1 min)
  4. Add in vegetable broth, water and tomatoes. Stir and allow to warm for 5-8 min.
  5. Once the soup is warmed, add in the cream cheese and cream or coconut milk and stir until completely incorporated (about 5 min)
  6. Serve. You can add any low carb toppings you like.

Notes

Using almond milk cream cheese and coconut milk, the totals are: 4 net carbs, 21g protein, 16 g fat.

Using dairy cream cheese and heavy whipping cream, the totals are: 4 net carbs, 19g protein, 21 g fat

I made the vegetarian/vegan soup and all three of my kids plus my husband ate it without complaint (that’s winning if I’ve ever seen it!).

We used Kite Hill almond milk cream cheese. I liked it better than Daiya. My daughter is lactose intolerant and it’s hard to find dairy substitutes she’ll actually eat.

This is easy to make in your Instant Pot…just leave the dairy/dairy replacements out until just before you serve it.
