I’ve been on and off of being gluten free for the last two years, but this past month I asked my husband to try it out too.
He balked, but when I said just do it for two weeks, he finally agreed.
I think one of the main issues he had was that they get donuts each Friday…and he didn’t want to miss out. So those two Fridays I tried to make some yummy “treats” for him to take to work so he could see that he wasn’t really missing out on anything.
Gluten Free Coffee Cake
I found this yummy gluten free coffee cake recipe on the side of the King Arthur Flour glutenfree all-purpose baking mix box (it’s also on their website).
I only made one change to it (on our second round because it was so yummy the first time around that I made again a week later!) which was I added 3/4 cup of milk instead of 1/2…it just seemed kind of dry.
Also the topping was not quite as crumbly as I thought it should be…you might not want to use as much butter as they suggest.
Recipe
topping:
2/3 cup King Arthur Flour Baking Mix
1/2 cup brown sugar
1 tsp cinnamon
6 Tbsp butter (might want to use 4)
cake:
1.5 cups King Arthur Flour baking mix
1/2 cup sugar
1/4 cup melted butter
2 large eggs
1/2 cup milk (I used a bit more)
1 tsp vanilla
Directions
1. Preheat oven to 350 degrees. Lightly grease 9″ pan.
2. Mix the first 3 ingredients for the topping then work in butter until crumbly. Set aside.
3. Mix the dry ingredients and the wet ingredients for the cake separately. Then mix the wet ingredients into the dry.
4. Spread into pan and top with topping.
5. Bake 22-26 minutes until toothpick comes out clean.
