Last week on my Meal Plan Monday I added some Sweet Potato Waffles from Grok Grub.
But…I don’t have a waffle iron (I have every other gadget, but not that one) so I decided to just make pancakes instead. My kids love to have pancakes for breakfast so I try to make a big batch for brinner every couple of weeks and freeze them for their breakfasts.
That was a great plan this time, but didn’t work out because they ate them ALL! These sweet potato pancakes were crazy good!
Sweet Potato Pancakes
I based my recipe on the one from Grok Grub, but made a few little tweaks, but basically the same.
Ingredients:
4 eggs
1/2 c freshly chopped sweet potato
1/3 cup milk
1 tsp salt
1/2 c flour
dash of cinnamon
Directions:
1. I used my new Omega juicer to mash up the sweet potato. Instead of putting on the juicing screen I just used the blank screen so it all came out together.
2. I added all the ingredients together and mixed.
3. I placed everything in my Magic Bullet blender to make sure that the sweet potatoes were mashed up enough not to be noticed.
4. I poured them on the hot skillet and used my secret technique to get them all to be nicely sized.
Each of my kids ate 4! They didn’t even let me put them on a plate. They just sat on the couch finishing up a show and sucked them down! These are definitely going into my permanent pancake rotation.
