I have been really working to stick to the meal plan that I create each week. To help me do that I started posting my meal plans each Monday (check out Week 2 here).

This week I had Taco Pie on Tuesday (sounds like a children’s book) and I think it was pretty good…although pleasing all 3 children on a nightly basis is impossible.

I found this recipe for Taco Pie on Frugal Mommy Christine’s site.

This one is super easy to adjust for picky eaters. I also like that it’s easy make gluten free by using this gluten free pie crust recipe or if you’re in a hurry you can just open up some crescent rolls and put them in the pie pan…but that would be yummy too!

I just cooked the pie crust while I browned the ground beef. Then I added lettuce and cheese. I wanted to add a few more things, but my picky eaters weren’t up for it. I was thinking that maybe next time I’ll mix some refried beans in with the meat to make it stick together more.
