I know, I know…many of you are going to be very disappointed in what I chose to feed my kids one night this week, but let me explain.
Maddi screamed from 9am until 10am (mostly in public of course). Then she only said “NO” or “WHY” to anything I said to her for the rest of the morning…I finally just stopped talking to her and let her watch tv.
Then she took a nap and woke up CRAZY! She’s laughing maniacally and hopping up and down. Don’t know what’s going on, but she scares me.
The boys also chose today to make another plea for only meatless meals. I just couldn’t take it any more. I threw out my meal plan and looked in the freezer and found tater tots….which is how we got to Tater Tot Casserole.
- 1 32-oz bag of tater tots
- 2 handfuls of cheese
- 6 eggs
- 1/4 cup of milk
- Preheat the over to 400 degrees.
- Spray to bottom of a 2 qt baking dish with cooking spray.
- Dump the bag of tater tots in the dish.
- In a small bowl mix the 6 eggs with the milk.
- Pour the eggs over the tater tots.
- Put the 2 handfuls of cheese on tops.
- Bake for 35 minutes or until the eggs are cooked.
