Life has gotten a little crazier these days so I’m depending more and more on my crock pot (or slow cooker…I never know which one is correct).

I have a thing about chicken…no idea, but always have…and I can really only eat it if it’s in little chunks or shredded. So I really like to use the crock pot to make chicken dishes.

King Ranch Chicken Soup is a TX staple (the King Ranch here in TX is one of the largest ranches in the world) so I thought I’d throw in some ingredients and see how it worked out.

It was AWESOME!

King Ranch Chicken Soup

 

King Ranch Chicken Soup

4 cups water

1 can diced tomatoes

1 cup corn

1/2 package taco seasoning

1 package ranch dip

2 chicken breasts

sour cream/avocado/cheese optional

tortilla chips

Add the water to the slow cooker first and then the packets of taco seasoning and ranch dip. Stir those until they dissolve a little and then put in the chicken breasts. Then dump the corn and tomatoes on top and cook on low all day (or on high if you forget…LOL).

Be sure to serve with tortilla chips on top and then add any of the other optional toppings that you like.

By the way, the chicken does not have to be thawed…you can throw frozen chicken and it’ll come out perfect!
