I remember running around the neighborhood as a kid on hot summer days and just playing and playing with friends. Then coming home and having a big glass of Kool-Aid and thinking that life was perfect.
I sooo wish I could go back to those care-free days….so sometimes I’ll make some Kool-Aid just to try and get those feelings of freedom back.
I want my kids to have that same feeling this summer so I came up with a fun kid friendly recipe: Kool-Aid Chocolate Cherry Cupcakes.
Kool-Aid Easy Mix
These cupcakes came out so fluffy and airy…they almost melt in your mouth.

Kool-Aid Chocolate Cherry Cupcakes
This recipe is SUPER easy, but a word of warning…they will explode if you’re not careful. You can only fill the cupcake liners up 1/2 way or they will become huge (don’t ask how I figured this out!).
Ingredients
- 1 box of chocolate cake mix
- 3 large eggs
- 1 cup of Cherry Kool-Aid Easy Mix
- 1/3 cup of vegetable oil
- 1 can of vanilla frosting
- 1 bottle of red sprinkles
- 1 jar of maraschino cherries
Instructions
- Preheat oven to 350 degrees.
- Place cupcake liners in cupcake pans.
- Mix cake mix, eggs, Cherry Kool-Aid Easy Mix and vegetable oil together in a large bowl.
- Beat on low for 30 seconds.
- Beat on medium for 2 minutes.
- Use an ice cream scoop to fill each liner up only 1/2 way (very important).
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool before frosting.
- Apply a light coat of frosting on top of cupcakes.
- Sprinkle a few sprinkles on top and place a cherry in the middle.
Notes
It's very important to only fill the cupcake liners up only half way or they will rise too much.

My advice…don’t put too much icing on top…it can overpower the taste. Just a little swipe of icing, a few sprinkles, a cherry and a nice glass of Kool-Aid and you’ve got the makings of a perfect summer afternoon.
