Today I happened to be home for lunch and needed a quick low carb lunch. I had a bag of cauliflower already riced in the fridge that I needed to use (cauliflower goes bad FAST). So I looked around on the web and found some cauliflower rice recipes. I decided to add a little to mine to make it coconut lime cauliflower rice.
Coconut Lime Cauliflower Rice
I found this recipe for Coconut Cauliflower Rice on Sweet Peas and Saffron. I pretty much followed her recipe (as well as I follow recipes…which isn’t always all that well).
She made hers from fresh cauliflower and I used a bag of Green Giant already riced cauliflower (not my usual but sometimes when they’re out of organic I’ll grab a regular bag).
She adds 1 tablespoon of coconut sugar to hers too which I probably only did a small pinch of…just enough to put a little sprinkle around the pan.
I added the coconut milk in once I took the riced cauliflower out of the pan and let it cool for a couple of minutes (and now I have almost an entire can of coconut milk in the fridge that I now need to find another use for).
That’s when I got the bright idea that maybe it needed a little lime (you put the lime in the coconut, right?) I grabbed my doTerra Lime essential oil and added two drops and mixed it in.
This was SUCH a good idea!
I think the bag said it had 5 servings…so I ate the entire bowl because who doesn’t like coconut lime cauliflower rice! I think it was only about 10g of carbs for the entire bag so still counts as low carb in my book.
This was a super simple, fast and easy low carb lunch. The ingredients were just cauliflower, coconut oil, coconut sugar, coconut milk, salt and lime essential oil. Be sure to check out her recipe at the link above to see how to put it all together.
