I admit…I never really tried a mango until about 2 years ago. They’re just one of those fruits that doesn’t look too interesting and has kind of spicy smell (which means I’m out if it’s at all spicy).
I’ve also tried some of those HUGE bags of dried mangoes at Costco – and hated them.
But last year I decided to get a dehydrator and mango was one of the things I tried…and they were AMAZING! I ate them all and didn’t share any with the kids!
Then last week we found this fun little roadside farmer’s market and the kids picked up a couple of mangoes. So I kept thinking I would make those mango chips again…but then I thought, “I wonder if I can come up with a mango muffins recipe.”
Well…here ya go! And it’s mild tasting – it’s the perfect kid friendly recipe!
Mango Muffins Recipe
Mangos are a little tricky to cut. You have to cut them sideways along the widest part (that makes no sense sorry…check out this article on how to cut a mango if you still need help). They have a long thin seed so cutting both sides so they’re very wide and then cut the two smaller sides off.
Also for this recipe, I used a potato peeler and peeled the skin off before cutting them. This was MUCH easier so they weren’t so slippery.
I also used my Ninja Express Chop to chop the mango into very tiny pieces before adding to the mix. My kids would rebel if their muffins had chunks so make sure to chop them for at least 30 seconds.
This mango muffins recipe has a very mild taste. Even though it calls for 2 cups of chopped mango, it's very kid friendly.
Ingredients
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1 stick or 1/2 cup butter, melted
- 2 eggs
- 3/4 cup brown sugar
- 1/4 cup unsweetened applesauce
- 2 large mangoes, finely chopped (should be about 2 cups)
- **for gluten free - just substitute equal parts gluten free flour for the flour and add 3/4 teaspoon of xantham gum
Instructions
- Preheat over to 350 degrees Fahrenheit.
- Place cupcake liners in the cupcake pan.
- Peel the mango and cut it into small chunks before placing in the food processor (only do one at a time if using a small chopper).
- Mix flour, baking powder, salt and baking soda in a small bowl and set aside.
- In a larger bowl, melt the butter.
- Add the eggs, brown sugar, mango and applesauce to the butter and stir by hand until combined.
- Add the flour mixture to the mango mixture and stir using a hand held or counter top mixer on low for 30 seconds.
- The mixture will be very thick and not runny.
- Use an ice cream scoop to scoop the muffin mix into each liner.
- Bake for 25-30 minutes or until a toothpick comes out clean.
