Meal planning is such an important step in getting…and keeping…control of my week.
There are weeks I do really well and know exactly what’s for dinner each night…and even have all the ingredients. And there are weeks I totally blow it and we eat out 3 nights and sandwiches the other nights.
A few weeks ago I did a review of my friend Carrie’s new meal planner and it really helped me get organized. Then I thought that since I’m already meal planning…maybe I should post those plans each week so that I could help y’all out too!
Meal Plan #1
Monday – Chicken Pot Pie
Tuesday – Black Bean Nachos (boys have Kung Fu) – black beans, cheese and chips
Wednesday – Gnocchi and Broccoli in Parmesean Cream Sauce
Thursday – Gluten Free Pizza Bites
Friday – night off
Saturday – Spinach & Pancetta Calzone
Sunday – Crock Pot French Dip Sandwiches
I do try and do as much gluten free cooking as I can (though it’s not 100% so if you need gluten free just be sure to double check ingredients). I usually refer to the cookbook Gluten Free on a Shoestring for making breads and cakes.
