Welcome to Week 17 of Meal Plan Monday!
Some of you may know that I’ve recently been diagnosed with insulin resistance. I’ve had to really change my diet and that’s why I’ve moved these meal plans to be gluten free. I just wanted to have y’all help me cheer my success…I’ve lost 6 lbs in the last 3 months – which if you know anything about trying to lose weight while being insulin resistant, you’ll know that’s a big deal!
I hope these meal plans are helping you as much as they are me and let’s keep trucking!

Meal Plan #17
Monday – Roasted Red Pepper Parmesan Baked Eggs
Tuesday – Taco Slaw in Corn Tortillas with Guacamole
Wednesday – Chicken Bacon Avocado Salad with Roasted Asparagus
Thursday – Broccoli and Cheddar Quinoa Bites
Friday – night off or pizza or meatza
Saturday – Hamburgers on the Grill with Baked Spicy Fries
Sunday – Balsamic Pear and Portobello Mushroom Chicken
Treat – Gluten Free Lemon Bars
I do try and do as much gluten free cooking as I can (though it’s not 100% so if you need gluten free just be sure to double check ingredients). I usually refer to the cookbook Gluten Free on a Shoestring for making breads and cakes.
