Welcome to Week 18 of Meal Plan Monday!
WOW…it’s been a crazy couple of weeks around here (sorry this is up late). But it’s going to be kind of quiet this week so hopefully I’ll do a better job of sticking to the meal plan.
I didn’t gain any weight, but I didn’t feel the same as I do when I stick to the gluten free way of life better. I’ve also discovered that juicing every 1 to 2 days really helps me maintain my energy levels. You have to try it!

Meal Plan #18
Monday – Summer Pasta (the link to the site doesn’t work but the recipe is in the pin)
Tuesday – Portobello and Zucchini Tacos
Wednesday – Open Faced Turkey Cranberry Sandwich (use gf bread)
Thursday – Chicken, Bacon and Cream Cheese Mini Taquitos (just use corn tortillas or make your own)
Friday – night off or pizza or meatza
Saturday – Pineapple Shrimp Stir Fry
Sunday – Crock Pot Cheesy Chicken
Treat – Berry Yogurt Popsicles
I do try and do as much gluten free cooking as I can (though it’s not 100% so if you need gluten free just be sure to double check ingredients). I usually refer to the cookbook Gluten Free on a Shoestring for making breads and cakes.
