Welcome to Week 21 of Meal Plan Monday!
Where did the summer go? The boys have one more week of camp, then one week off and then Connor starts First Grade! Then the next week Maddi and Evan start pre-school! I’m going to really have to stick to these better so that I can survive the Back to School mania with activities, new friends, homework and sports. Yikes!

Meal Plan #21
Monday – Summer Vegetable Fritatta
Tuesday – Chicken Enchilada Casserole Pie
Wednesday – Wild Rice Pilaf with Sweet Potatoes & Brussels Sprouts
Thursday – Vegetable Lasagna Casserole
Friday – night off or pizza or meatza
Saturday – BBQ Chicken Street Tacos
Sunday – Balsamic Roast Beef (slow cooker)
Treat – Salted Soft Pretzels (yes, their gluten free)
I do try and do as much gluten free cooking as I can (though it’s not 100% so if you need gluten free just be sure to double check ingredients). I usually refer to the cookbook Gluten Free on a Shoestring for making breads and cakes.
