Welcome to Week 23 of Meal Plan Monday!
I must admit…I really struggled last week. We had to move Maddi’s therapy time to 3:15pm…which means I’m upstairs dealing with her until 4:30pm. Then 3 days we had to leave the house by 4:55pm to make it to Kung Fu class. Ugh…getting healthy dinners – or any dinner – was a massive struggle last week.
This week we’re throwing in Connor starting at a new school – that’s 20 min away. So there’s car rider line and drive time to throw into the mix. Then next week the other two start school! Yikes! It’ll be quite a feat just to survive each day.
So this week I took pictures of some of the things I fall back to when I need quick meals. Also I will be making my meals around lunch time and putting them in the fridge so I can just reheat at dinner time.

Meal Plan #23
Monday – Go Picnic Sunbutter and Crackers (my kids LOVE these)
Tuesday – Taco Tuesday (cook the ground beef ahead of time)
Wednesday – Spaghetti and Meatballs (these meatballs are AWESOME!)
Thursday – Black Bean Nachos (beans, cheese and Scoops)
Friday – night off or pizza or meatza
Saturday – Night OFF to celebrate surviving the week!
Sunday – Chicken and veggies (put whole chicken in the crock pot and go about your day…you’ll have left overs for lunch for the week)
Treat – Chocolate Chip Muffins
I do try and do as much gluten free cooking as I can (though it’s not 100% so if you need gluten free just be sure to double check ingredients). I usually refer to the cookbook Gluten Free on a Shoestring for making breads and cakes.
