Welcome to Week 4 of Meal Plan Monday!
We got a little thrown off our schedule this week so I didn’t get to all the meals on my meal plan. I decided to drive out to the strawberry farm, 1.5 hours away, on Wed. after school to try and win the Mom of the Year Award…only to find it closed! We’ll have to try again this week I guess…but maybe I’ll double check the website before we go!

Meal Plan #4
Monday – Pasta with Artichoke Hearts, Sun-Dried Tomatoes & Toasted Almonds
Tuesday – Baked Chicken Fajitas
Wednesday – Flank Steak Stir-Fry with Asparagus and Red Pepper
Thursday – Strawberry Walnut Spinach Salad with Baked Chicken (leftover from Tuesday or grab a cooked one from the store)
Friday – night off or pizza
Saturday – Honey Grilled Shrimp with rice and veggies
Sunday – Kid Friendly Chili (in case you don’t have Easter plans)
Treat – Homemade Fruit Snacks
I do try and do as much gluten free cooking as I can (though it’s not 100% so if you need gluten free just be sure to double check ingredients). I usually refer to the cookbook Gluten Free on a Shoestring for making breads and cakes.
