Welcome to Week 40 of Meal Plan Monday!
Last week I told you that I’m doing Whole30 for the month of January. Guess what? I’ve lost 5.5lbs since Jan.1!
I’m not gonna lie…it’s been hard, but apparently it’s working for me. Back in April I was diagnosed as insulin resistant so losing weight is a struggle. My dr put me on some meds and the deal was I’d only be on the for a year, but I had to lose some weight (like 10-15lbs) for that to happen.
I’m so looking forward to my visit in April again to see if I have healed myself with food!

Meal Plan #40
Monday – Zucchini Noodles with Basil Almond Pesto & Cherry Tomatoes
Tuesday – Chipotle Chicken Sweet Potato Skins (minus the cheese & yogurt)
Wednesday – Roasted Veggies & Sausage
Thursday – Red Pepper Tacos
Friday – Broccoli Salad with Creamy Avocado Dressing
Saturday – Loaded Cauliflower Fritters & Salad
Sunday – Slow Cooker Chicken, Sweet Potato and Kale Stew
I do try and do as much gluten free cooking as I can (though it’s not 100% so if you need gluten free just be sure to double check ingredients). I usually refer to the cookbook Gluten Free on a Shoestring for making breads and cakes.
