Welcome to Week 41 of Meal Plan Monday!
OK…I admit it…I fell off the Whole30 wagon this week. I just wasn’t seeing any progress at all this week with it and I know that in the past I always needed some kind of “cheat meal” to help convince my metabolism that I wasn’t starving to death. So I had a wrap and fries at Chick Fil A on Thurs.
Hopefully I can stick it out the entire 30 days now (although by their very strict rules I’d have to start over – NOT). The main goal is to reset my system and my food choices so that I can get my insulin resistance under control. And I’m fine with a “cheat meal” once a week – I just need to make sure that it doesn’t become 2 then 3 and…

Monday – Mushroom Stuffed Cabbage Rolls
Tuesday – Grilled Cilantro Lime Chicken with Zucchini
Wednesday – Hamburgers & Sweet Potato Fries
Thursday – Butternut Squash Chicken Mash
Friday – Eggplant Pizza
Saturday – Ground Beef, Eggs & Avocado Bowl
Sunday – Paleo Steak Kabobs
I do try and do as much gluten free cooking as I can (though it’s not 100% so if you need gluten free just be sure to double check ingredients). I usually refer to the cookbook Gluten Free on a Shoestring for making breads and cakes.
