Welcome to Week 6 of Meal Plan Monday!
If you didn’t check out the Lasagna Cupcakes from last week’s meal plan, you HAVE to! They were a big hit!
This week will be a bit different for me. Maddi goes into the hospital tomorrow for her last surgery. This is good, but we will be there for a week probably. So this meal plan has to be things my mom can cook for my boys. Wish us all luck! LOL

Meal Plan #6
Monday – Cheesy Cauliflower Casserole
Tuesday – Mexicali Hashbrown Taco Casserole
Wednesday – Italian Beef with Mashed Potatoes
Thursday – GF Chinese Chicken Balls with Sweet & Sour Sauce with veggies and rice
Friday – night off or pizza
Saturday – GF Layered Caribbean Chicken Salad
Sunday – Chunky Potato & Sausage Soup
Treat – Gluten Free Twinkie
I do try and do as much gluten free cooking as I can (though it’s not 100% so if you need gluten free just be sure to double check ingredients). I usually refer to the cookbook Gluten Free on a Shoestring for making breads and cakes.
