Welcome to Week 8 of Meal Plan Monday!
I really struggled to stick to the meal plan last week. Maddi was super crabby and adjusting to her post-surgery body has been kind of difficult. Plus taking her and Evan to the doctor last week and trying to get all the work on the blog done…I admit, by Thursday I just gave up and went to Chick-Fil-A. I promise to try harder this week!

Meal Plan #8
Monday – Rice, Cheddar and Spinach Pie
Tuesday – Fish Taco Bowls
Wednesday – Cheesy Chicken Au Gratin Casserole
Thursday – Turkey Wrap with Chipotle Avocado Spread (use the gf tortilla recipe below)
Friday – night off or pizza
Saturday – GF Crockpot Lasagna
Sunday – Barbacoa Lamb Sliders
Treat – Cinnamon Sugar Chips (use this GF tortilla recipe if you need it)
I do try and do as much gluten free cooking as I can (though it’s not 100% so if you need gluten free just be sure to double check ingredients). I usually refer to the cookbook Gluten Free on a Shoestring for making breads and cakes.
