Welcome to Week 9 of Meal Plan Monday!

Did you make the lamb sliders from last week? We ate the lamb burgers and that’s a big deal at my house!

Not sure if you read my post from a few weeks ago about needing to start bio-identical hormone therapy, but that testing also showed that I am pretty severely insulin resistant (which will lead to diabetes and a host of other issues).

I called the dr this past week because I’m not feeling better. The NP told me that most of my symptoms are from the insulin resistance and the ONLY way to feel better quickly (in about 3 months) is to go on a strict Primal/Paleo diet – no grains, no sugar.

So you may see some of those types of recipes along with gluten free recipes mixed in from now on. I may also include something just for the kids, but the majority will be Primal/Paleo.

Meal Plan #9

Monday – Grilled Eggplant and Tomato Caprese

Tuesday – Loaded Mexican Nachos

Wednesday – Braised Bison with Spinach, Mushroom, Tomato Salad

Thursday – BLT Bites

Friday – night off or pizza or meatza

Saturday – Glazed Chicken Bacon Bites with Simple Russian Salad

Sunday – Whole Roast Chicken Crock Pot

Treat – Almond Butterfingers

I do try and do as much gluten free cooking as I can (though it’s not 100% so if you need gluten free just be sure to double check ingredients). I usually refer to the cookbook Gluten Free on a Shoestring for making breads and cakes.
