Life has been absolutely crazy lately.

I am running non-stop all day long. I fall into bed at night and then get up and do it all over again.

I barely have time to eat and when I do it’s just something grabbable that I can eat in the car rider line.

Afternoon Energy Boost

At Walmart the other day I found a new afternoon energy boost drink that’s a healthier option, V8 V-Fusion+Energy Drink.

This drink gets it’s natural energy from green tea (one of my favorites) and at only 50 calories is definitely a better choice than soda.

It’s so much fun to have a snack that I keep for the afternoons only that I can look forward to every day (since I DEF don’t look forward to spending an hour and a half in the car each afternoon).

I chose the Peach Mango drink and then I remembered that I had a mango muffins recipe I did a few months back. And since peaches are in season here in central Texas right now…a peach mango muffin would be the perfect grabbable snack to go with my fun new drink.

I based this recipe on my last recipe, but then found that my applesauce had gone bad and replaced it with oil.

These are a very dense muffin, but the kids claimed to like them better than the plain mango ones. To me, they needed maybe one more peach…not sure, but definitely try out the base recipe and adjust in later tries.

Afternoon Energy Boost + Peach Mango Muffins Recipe

Prep Time: 15 minutes

Cook Time: 30 minutes

Yield: 18 muffins

Ingredients

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 stick or 1/2 cup butter, melted
  • 2 eggs
  • 3/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 large mango, pulverized (I used a small food processor)
  • 2 medium peaches, pulverized (I used a small food processor)
  • **for gluten free - just substitute equal parts gluten free flour for the flour and add 3/4 teaspoon of xantham gum

Instructions

  1. Preheat over to 350 degrees Fahrenheit.
  2. Place cupcake liners in the cupcake pan.
  3. Cut the peaches away from the pit and into smaller bits. Place into the food processor to pulverize.
  4. Peel the mango and cut it into small chunks before placing in the food processor.
  5. Mix flour, baking powder, salt and baking soda in a small bowl and set aside.
  6. In a larger bowl, melt the butter.
  7. Add the eggs, brown sugar, peaches, mango and oil to the butter and stir by hand until combined.
  8. Add the flour mixture to the peach mango mixture and stir using a hand held or counter top mixer on low for 30 seconds.
  9. The mixture will be very thick and not runny.
  10. Use an ice cream scoop to scoop the muffin mix into each liner.
  11. Bake for 25-30 minutes or until a toothpick comes out clean.
