I LOVE to shop at Costco because they have so many organic options these days, but everything comes in such large quantities that we can’t possibly eat it all before it goes bad.
So I’ve started reading up about fermenting and freezing vegetables so that we can stop so much of the food waste that ends up happening!
Carrie over at CarrieElle.com has 6 great tips for freezing veggies – my favorite is to keep a container in the freezer that you can just add to. I have been making my own stock lately and that’s a great way to save the leftovers.

Be usre and check out some of my roasted vegetable recipes too. Our favorite way to eat vegetables right now is to throw a little olive oil and salt on them and roast them in the oven! YUM!
