My kids LOVE chocolate milk and I can’t really blame them. That’s all I would drink as a kid too.

TruMoo Wheat Free Chocolate Chip Muffins

These muffins were a big hit with the kids (and the adults too). They peeled right off the wrapper too which can be kind of tricky with wheat free/gluten free baked goods.

They are a little thicker/heavier and less sweet than you will expect – so if you like sweeter just up the sugar.

Ingredients

1 1/2 cups pf gluten free flour

3/4 tsp of xanthum gum

1 1/2 tsp baking powder

1/4 tsp baking soda

1/2 cup brown sugar

2 1/2 TBSP Cacao Powder

1 1/2 cups TruMoo Chocolate Milk

1 stick of butter

1 tsp pure vanilla extract

1/4 cup plain greek yogurt

2 eggs

1/2 cup Cacao Chocolate chips

Directions

1. Preheat the oven to 350 degrees.

2. In a medium sized bowl, mix all of the dry ingredients together (the first 6 listed) by hand.

3. In a large bowl, mix all the wet ingredients (or the next 5 ingredients) together by hand. Do NOT add the chocolate chips yet.

4. I let the kids help at this point and had them mix the the wet ingredients with a spoon as I slowly added in the dry ingredients. If you don’t have helpers, use the electric mixer on medium and slowly add in the dry. Continue to blend with the electric mixer (even if you had helpers) until completely mixed. The batter will be a bit thicker than what you expect.

5. Line muffin tins with liners and use an ice cream scoop to put one heaping scoop of batter in each tin (makes 24).

6. Bake for 18 -20 minutes. Let cool for 10 minutes.

7. Enjoy with a big glass of TruMoo chocolate or strawberry milk!
